Creamy Dreamy Strawberry Cheesecake French Toast

Breakfast is an easy meal for me. Most days, it's cereal with some berries or toast. Once in awhile, I'll splurge and cook up scrambled eggs.

But, once a week I go big or go home. Since I'm already home, I go big! This week, it was time for the Creamy Dreamy Strawberry Cheesecake French Toast. Believe me, it doesn't take much longer to make it than to say it.



Here's the skinny (HA) on how to make this:

Defrost a bag of frozen non-sweetened strawberries and pour them into a bowl. These are to use in place of syrup. You can actually use any fruit on top! Pick your favorite and have them ready, in a bowl, for when your Cheesecake French Toast is ready.

Hand whip 8 oz of plain cream cheese with 3 tablespoons of confectioner's sugar, 1/4 teaspoon vanilla and 1/4 teaspoon of cinnamon. Set to the side.
Get out 8 slices of bread. Today I used white bread, but some days I use Italian or sourdough bread. It all depends on what I have handy.

In a pie tin, whip together 5 eggs with 1/4 cup of milk, 1 tablespoon of vanilla and 1 teaspoon cinnamon.
Pour vegetable oil into a large skillet (generously cover the bottom) and turn burner to medium. While the oil is heating, spread your cream cheese mixture onto 4 slices of bread. Lay it on thick! Place your remaining 4 slices of bread on top so that you've made a sandwich. Cut each of these sandwiches diagonally so that you have 8 triangles.

One at a time, dip one side of the "sandwich" into your egg mixture, flip it over to coat the other side and carefully place in your hot oil. Repeat for each triangle. You should be able to fit 3-4 triangles into your skillet at a time. Fry until golden brown, then flip and fry up the other side til equally golden brown. Remove from the skillet and place on paper towels to drain any excess oil. Repeat until you've fried all of your triangles.
Lightly sprinkle the top with confectioner's sugar and serve with strawberries (or the fruit of your choice) on top. Garnish with whipped cream, whipped butter and/or a sliced strawberry.
Now, open the newspaper, pour a cup o'java and enjoy a relaxing morning breakfast!
